Ingredients
 

  • 1 pound white asparagus, peeled and woody ends trimmed
  • 1 tablespoon lemon juice
  • 1 tablespoon turbinado, or granulated sugar
  • ½ teaspoon white pepper, ground

Method
 

Blanch the asparagus

  • Bring a large saucepan of salted water to a boil.
  • Add the sugar and lemon juice, stir.
    1 tablespoon lemon juice, 1 tablespoon turbinado
  • Drop the asparagus in and blanch for 4-5minutes, a little longer if the stalks are super thick.
    1 pound white asparagus
  • Drain and season white pepper and with sea salt, if desired.
    ½ teaspoon white pepper

    Notes

    Yes, you can make this recipe with green asparagus. It will, however, be very, very green. And we know it’s not easy being green.

    Ingredients
     

    • 3 ounces fresh wild garlic scapes, washed
    • ½ cup fresh basil, chopped
    • ¾ cup extra-virgin olive oil
    • 1 tablespoon white wine vinegar
    • 1 tablespoon honey
    • 2 ounces pumpkin seeds
    • cup freshly grated parmesan cheese

    Method
     

    • Put the basil, garlic scapes, vinegar, honey and olive oil in the blender and puree.
      3 ounces fresh wild garlic scapes, ½ cup fresh basil, ¾ cup extra-virgin olive oil, 1 tablespoon white wine vinegar, 1 tablespoon honey
    • Add the remaining ingredients and puree again.
      2 ounces pumpkin seeds, ⅓ cup freshly grated parmesan cheese
