Pork Belly Nuggets

Ooh, there’s not much better than smoked meat, cooked low and slow. It’s culinary ecstasy. Fatty, juicy pork belly is about as good as food gets. Just don’t make it for your cardiologist, and use it in moderation.

These are sweet bite-sized little nuggets that are perfect for pre-game gatherings and garden and deck parties.

Equipment and Supplies

Ingredients
 

  • 4 pounds pork belly, skin removed
  • pork rub
  • ½ cup apple juice
  • 3 tablespoons honey

  • ½ cup barbecue sauce
  • 3 tablespoons honey

Method
 

  • Preheat the smoker to 250°F using cherry or apple wood.
  • Make sure the skin is removed from the pork belly. Cut the pork belly into approximately 1” cubes.

  • Transfer the cubes to a mixing bowl. Dump the rub over the belly and toss to coat. Put the pork on the GrillGrates, close the lid and smoke to an internal temperature of about 160°, about 3 hours.

  • Remove pork belly cubes to a double layer of foil big enough to make a foil pack. Increase the temperature to 300°F.
  • Transfer pork belly to a sheet of aluminum foil, packed tightly into a single layer.
    Pour the apple juice and 3 tablespoons of honey over the pork and toss to coat. Wrap tightly with foil and put back in the smoker.

  • Smoke another hour to 205°
  • Open the foil packet and pour the BBQ sauce and honey over the meat. Toss lightly just to coat, Don't you dare pull those nuggets apart.
    ½ cup barbecue sauce, 3 tablespoons honey
  • Place back on the smoker until the sauce becomes tacky and starts to caramelize, approximately 30 – 60 minutes. Unwrap the foil and dig in!

    Came out great! Nice sticky texture, flavors were wonderful. Although I realized last minute I didn’t have foil I used a cast iron on the smoker and it worked out wonderfully still.
