- 4-quart saucepan
- vegetable peeler
Ingredients
- 1 pound white asparagus, peeled and woody ends trimmed
- 1 tablespoon lemon juice
- 1 tablespoon turbinado, or granulated sugar
- ½ teaspoon white pepper, ground
Method
Blanch the asparagus
- Bring a large saucepan of salted water to a boil.
- Add the sugar and lemon juice, stir.1 tablespoon lemon juice, 1 tablespoon turbinado
- Drop the asparagus in and blanch for 4-5minutes, a little longer if the stalks are super thick.1 pound white asparagus
- Drain and season white pepper and with sea salt, if desired.½ teaspoon white pepper

Yes, you can make this recipe with green asparagus. It will, however, be very, very green. And we know it’s not easy being green.

- 3 ounces fresh wild garlic scapes, washed
- ½ cup fresh basil, chopped
- ¾ cup extra-virgin olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
- 2 ounces pumpkin seeds
- ⅓ cup freshly grated parmesan cheese
Method
- Put the basil, garlic scapes, vinegar, honey and olive oil in the blender and puree.3 ounces fresh wild garlic scapes, ½ cup fresh basil, ¾ cup extra-virgin olive oil, 1 tablespoon white wine vinegar, 1 tablespoon honey
- Add the remaining ingredients and puree again.2 ounces pumpkin seeds, ⅓ cup freshly grated parmesan cheese
