What the blazes is SPG?

The simple answer is Salt, Pepper and Garlic. Ludwig prefers sea salt for its lower sodium content and white pepper for its added pungency.

Now comes the hard part: which ratio to use. Ludwig uses 2 parts sea salt, 2 parts coarse white pepper, and 1 part granulated garlic. Garlic powder has way more garlic than granulated, so if you only have powder you may want to use less, like half.

Other chefs use different ratios. Feel free to experiment and find what you prefer, then write it down! You can use the Submit Recipe menu at the top of this page if you wish.
